The BBQ will work as an oven, cooking the meat internally imparting lovely smokey flavours. Keeping the lid closed is going to control the temperature and allow a nice even cook.

Last summer, we had a very special guest chef hosting Sunday lunch at The BBQ Club. Ross Geach, former Rick Stein chef, created a superb six-course menu built around ingredients from his Padstow Kitchen Garden and his family's farm on the North Cornwall coast. Ross and his team grew, reared, and farmed absolutely everything that made it onto the coals on the Southbank. We shared a passion for seasonality and provenance, and we couldn't wait for everyone to enjoy glorious food straight from Cornish fields to Southbank forks!
